PRODUCT INFO
The only way a bone-in cut differs from its boneless cousin in cooking terms is through insulation. Air pockets in bone tissue act like a natural insulator, heating more slowly than muscle and retaining heat much longer.
Although the two brisket cuts can often be used interchangebly, the flat cut is most often used in braises that are sliced, like those popular on Jewish holidays and for corned beef. The fattier point cut, meanwhile, is preffered for pulled beef, beef sandwhiches and smoked barbecued brisket.
